Ingredients

  • Firm tofu - 200 grams
  • Soy sauce - 30 ml
  • Rice vinegar - 15 ml
  • Sesame oil - 10 ml
  • Baby spinach - 100 grams
  • Cucumber - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Radish - 50 grams, thinly sliced
  • Edamame (shelled) - 100 grams
  • Sesame seeds - 1 tablespoon
  • Nori (seaweed) - 1 sheet, shredded
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the tofu to remove excess water for about 10 minutes, then cut it into small cubes.
  2. In a bowl, combine soy sauce, rice vinegar, and sesame oil. Add the tofu cubes and marinate for 10 minutes.
  3. While the tofu is marinating, prepare the vegetables: wash the spinach, slice the cucumber, julienne the carrot, and thinly slice the radish.
  4. In a large mixing bowl, combine the spinach, cucumber, carrot, radish, and edamame.
  5. Once the tofu has marinated, add it to the mixing bowl with the vegetables.
  6. Sprinkle sesame seeds and shredded nori on top, then season with salt and black pepper to taste.
  7. Toss the salad gently to combine all ingredients and serve immediately.
