- Mirin - 1 tablespoon
- Cornstarch - 3 tablespoons
- Panko breadcrumbs - ½ cup
- Vegetable oil - 3 tablespoons
- Burger buns - 2
- Wasabi paste - 1 teaspoon
- Mayonnaise - 2 tablespoons
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Cucumber - ½, sliced

Steps
- Press the firm tofu for 15 minutes to remove excess moisture, then cut it into two equal-sized patties.

- While the patties are cooking, mix wasabi paste with mayonnaise in a small bowl to create the wasabi mayo.
- Toast the burger buns lightly in another pan or oven until golden.
- Assemble the burger by spreading wasabi mayo on the bottom half of the bun, then layer with lettuce, crispy tofu patty, sliced tomato, cucumber, and chopped spring onion. Top with the other half of the bun.
