- Sugar - 1 teaspoon
- Chili flakes - 1/2 teaspoon
- Sesame seeds - 1 tablespoon
- Green onions - 1 stalk
Steps
- Wash and peel the lotus root, then slice it into thin rounds (about 3-5 mm thick).
- Soak the sliced lotus root in water for 10 minutes to prevent browning and then drain well.
- Peel and julienne the carrot into thin strips.
- Heat the sesame oil in a frying pan over medium heat.
- Add the lotus root and carrot to the pan, and sauté for about 5 minutes until they start to soften.
- In a small bowl, mix together the soy sauce, mirin, sugar, and chili flakes.
- Pour the sauce over the sautéed vegetables and cook for another 5 minutes, stirring frequently until the liquid reduces and coats the vegetables.
- Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.
