Ingredients

  • Lotus root - 200 grams
  • Carrot - 50 grams
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sugar - 1 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon
  • Green onions - 1 stalk

Steps

  1. Wash and peel the lotus root, then slice it into thin rounds (about 3-5 mm thick).
  2. Soak the sliced lotus root in water for 10 minutes to prevent browning and then drain well.
  3. Peel and julienne the carrot into thin strips.
  4. Heat the sesame oil in a frying pan over medium heat.
  5. Add the lotus root and carrot to the pan, and sauté for about 5 minutes until they start to soften.
  6. In a small bowl, mix together the soy sauce, mirin, sugar, and chili flakes.
  7. Pour the sauce over the sautéed vegetables and cook for another 5 minutes, stirring frequently until the liquid reduces and coats the vegetables.
  8. Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.
