Ingredients
- Burdock root - 150 grams
- Carrot - 100 grams
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sugar - 1 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Sesame seeds - 1 tablespoon
- Water - 100 ml
Steps
- Wash and peel the burdock root and carrot. Cut the burdock root into thin matchsticks and the carrot into julienne strips.
- Soak the burdock root in water for about 5 minutes to remove bitterness, then drain.
- Heat the sesame oil in a frying pan over medium heat. Add the burdock root and carrot and sauté for about 5 minutes until they start to soften.
- Add the soy sauce, mirin, sugar, and red pepper flakes (if using) to the pan. Stir well to combine.
- Pour in the water and continue to cook, stirring occasionally, for another 5-7 minutes until the vegetables are tender and the liquid has mostly evaporated.
- Remove from heat and sprinkle with sesame seeds before serving.
