Ingredients

  • Burdock root - 150 grams
  • Carrot - 100 grams
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sugar - 1 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Sesame seeds - 1 tablespoon
  • Water - 100 ml

Steps

  1. Wash and peel the burdock root and carrot. Cut the burdock root into thin matchsticks and the carrot into julienne strips.
  2. Soak the burdock root in water for about 5 minutes to remove bitterness, then drain.
  3. Heat the sesame oil in a frying pan over medium heat. Add the burdock root and carrot and sauté for about 5 minutes until they start to soften.
  4. Add the soy sauce, mirin, sugar, and red pepper flakes (if using) to the pan. Stir well to combine.
  5. Pour in the water and continue to cook, stirring occasionally, for another 5-7 minutes until the vegetables are tender and the liquid has mostly evaporated.
  6. Remove from heat and sprinkle with sesame seeds before serving.
