- Short-grain rice - 1 cup (200g)
- Water - 1.5 cups (360ml)
- Mixed mushrooms (shiitake, enoki, and button) - 200g, sliced
- Soy sauce - 2 tablespoons (30ml)
- Sesame oil - 1 tablespoon (15ml)
- Mirin - 1 tablespoon (15ml)
- Green onions - 2, chopped
- Garlic - 1 clove, minced
- Fresh ginger - 1 teaspoon, grated
- Salt - to taste
- Black sesame seeds - for garnish (optional)
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak for 30 minutes.
- In a medium pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
- Add the sliced mixed mushrooms to the pot and stir-fry for 3-4 minutes until they soften.
- Drain the soaked rice and add it to the pot with the mushrooms. Stir to combine.
- Pour in the water, soy sauce, and mirin. Add salt to taste and bring to a gentle boil.
- Once boiling, reduce the heat to low, cover with a lid, and let it simmer for 15 minutes without lifting the lid.
- After 15 minutes, turn off the heat and let the rice sit, covered, for an additional 10 minutes to finish cooking.
- Fluff the rice with a fork, then gently fold in the chopped green onions.
- Serve warm, garnished with black sesame seeds if desired.
