Ingredients

  • Lotus root - 200 grams
  • Carrot - 50 grams
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Green onion - 1 stalk

Steps

  1. Peel the lotus root and slice it into thin rounds, about 3-5 mm thick.
  2. Soak the sliced lotus root in water for 5 minutes to remove excess starch, then drain.
  3. Julienne the carrot into thin strips.
  4. Heat sesame oil in a pan over medium heat, then add the lotus root and carrot.
  5. Stir-fry for about 5-7 minutes until the vegetables begin to soften.
  6. Add soy sauce, mirin, and sugar to the pan, and stir to coat the vegetables evenly.
  7. Continue to cook for another 2-3 minutes until the sauce thickens slightly.
  8. Remove from heat and sprinkle with sesame seeds and finely chopped green onion before serving.
