- Lotus root - 200 grams
- Carrot - 50 grams
- Soy sauce - 1 tablespoon

- Green onion - 1 stalk
Steps
- Peel the lotus root and slice it into thin rounds, about 3-5 mm thick.
- Soak the sliced lotus root in water for 5 minutes to remove excess starch, then drain.
- Julienne the carrot into thin strips.
- Heat sesame oil in a pan over medium heat, then add the lotus root and carrot.
- Stir-fry for about 5-7 minutes until the vegetables begin to soften.
- Add soy sauce, mirin, and sugar to the pan, and stir to coat the vegetables evenly.
- Continue to cook for another 2-3 minutes until the sauce thickens slightly.
- Remove from heat and sprinkle with sesame seeds and finely chopped green onion before serving.
