Ingredients

  • Burdock root - 150 grams
  • Carrot - 100 grams
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Water - 100 milliliters
  • Green onion - 1 stalk (for garnish)

Steps

  1. Wash and peel the burdock root, then julienne it into thin strips.
  2. Soak the burdock strips in water for about 5 minutes to remove bitterness, then drain.
  3. Wash and peel the carrot, then julienne it into thin strips.
  4. In a frying pan, heat the sesame oil over medium heat.
  5. Add the burdock root and sauté for about 5 minutes until slightly tender.
  6. Add the carrot strips and continue to sauté for another 3-4 minutes.
  7. Stir in the soy sauce, mirin, sugar, and water. Mix well and cook for an additional 5 minutes until the liquid is mostly evaporated.
  8. Remove from heat and sprinkle sesame seeds on top.
  9. Garnish with chopped green onion before serving.
