- Zucchini - 2 medium (about 300g)
- Ground pork - 200g
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Miso paste - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 tablespoon
- Shredded mozzarella cheese - 100g
- Green onions - 2, sliced
- Black sesame seeds - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Using a spiralizer, create zucchini noodles from the zucchini and set aside.
- In a skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the ground pork to the skillet, cooking until browned. Drain excess fat if necessary.
- Stir in the soy sauce, miso paste, salt, and pepper. Cook for another 2-3 minutes, ensuring the pork is evenly coated.
- In a large bowl, combine the zucchini noodles, cooked pork mixture, and half of the shredded mozzarella cheese. Mix well.
- Transfer the mixture into a baking dish, spreading it evenly. Top with the remaining mozzarella cheese and sprinkle with black sesame seeds.
- Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, garnish with sliced green onions, and serve hot.
