Ingredients

  • Zucchini - 2 medium (about 300g)
  • Ground pork - 200g
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Miso paste - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 tablespoon
  • Shredded mozzarella cheese - 100g
  • Green onions - 2, sliced
  • Black sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Using a spiralizer, create zucchini noodles from the zucchini and set aside.
  3. In a skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  4. Add the ground pork to the skillet, cooking until browned. Drain excess fat if necessary.
  5. Stir in the soy sauce, miso paste, salt, and pepper. Cook for another 2-3 minutes, ensuring the pork is evenly coated.
  6. In a large bowl, combine the zucchini noodles, cooked pork mixture, and half of the shredded mozzarella cheese. Mix well.
  7. Transfer the mixture into a baking dish, spreading it evenly. Top with the remaining mozzarella cheese and sprinkle with black sesame seeds.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven, garnish with sliced green onions, and serve hot.
