- Shirataki rice - 200 grams
- Chicken breast - 150 grams, diced
- Mushrooms (shiitake or enoki) - 100 grams, sliced
- Spinach - 50 grams, chopped
- Green onion - 2 stalks, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Bone broth - 500 ml
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the shirataki rice under cold water and drain well.
- In a medium pot, heat sesame oil over medium heat and sauté the minced garlic and ginger until fragrant, about 1 minute.
- Add the diced chicken breast to the pot and cook until browned and cooked through, about 5-7 minutes.
- Stir in the sliced mushrooms and cook for another 3-4 minutes until softened.
- Pour in the bone broth and soy sauce, bringing the mixture to a boil.
- Add the shirataki rice and chopped spinach, then reduce heat to a simmer for about 5 minutes.
- Season with salt and pepper to taste, then stir in the sliced green onions.
- Serve hot, garnished with additional green onions if desired.
