Ingredients

  • Shirataki rice - 200 grams
  • Chicken breast - 150 grams, diced
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Spinach - 50 grams, chopped
  • Green onion - 2 stalks, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Bone broth - 500 ml
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the shirataki rice under cold water and drain well.
  2. In a medium pot, heat sesame oil over medium heat and sauté the minced garlic and ginger until fragrant, about 1 minute.
  3. Add the diced chicken breast to the pot and cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the sliced mushrooms and cook for another 3-4 minutes until softened.
  5. Pour in the bone broth and soy sauce, bringing the mixture to a boil.
  6. Add the shirataki rice and chopped spinach, then reduce heat to a simmer for about 5 minutes.
  7. Season with salt and pepper to taste, then stir in the sliced green onions.
  8. Serve hot, garnished with additional green onions if desired.
