Ingredients

  • Yuba (tofu skin) - 100 grams
  • Cucumber - 1 medium, julienned

  • Red bell pepper - 1/2, thinly sliced
  • Green onion - 2 stalks, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Sesame oil - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Chili oil - 1 teaspoon (optional)
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Soak the yuba in warm water for about 10 minutes to soften, then drain and cut into bite-sized pieces.
