Ingredients
- Azuki beans - 100 grams
- Water - 500 ml
- Erythritol - 30 grams
- Agar-agar powder - 1 teaspoon
- Salt - a pinch
- Vanilla extract - 1/2 teaspoon
Steps
- Rinse the azuki beans under cold water and soak them in water overnight.
- Drain the soaked beans and place them in a pot with 500 ml of fresh water. Bring to a boil, then reduce the heat and simmer for about 30 minutes, or until the beans are tender.
- Once cooked, drain the beans and return them to the pot. Add erythritol, a pinch of salt, and 100 ml of water. Mash the beans with a fork or potato masher until they form a smooth paste.
- In a separate small pot, mix the agar-agar powder with 200 ml of water and bring to a boil, stirring constantly until fully dissolved.
- Combine the agar-agar mixture with the azuki bean paste and stir well. Add the vanilla extract and mix until fully incorporated.
- Pour the mixture into a mold of your choice and let it cool to room temperature. Once cooled, refrigerate for at least 2 hours to set.
- Once set, remove from the mold, slice into pieces, and serve chilled.
