Ingredients

  • Almond flour - 120 g
  • Mozzarella cheese, shredded - 100 g
  • Cream cheese - 60 g
  • Egg - 1 large
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Cooked chicken breast, diced - 150 g
  • Soy sauce (low sodium) - 2 tbsp
  • Mirin (or sugar-free substitute) - 1 tbsp
  • Green onions, sliced - 2 stalks
  • Sesame oil - 1 tsp
  • Red bell pepper, sliced - 1/2
  • Fresh cilantro, for garnish - optional

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine almond flour, shredded mozzarella, cream cheese, egg, baking powder, and salt. Mix until a dough forms.
  3. On a parchment-lined baking sheet, press the dough into a round pizza shape, about 1 cm thick.
  4. Bake the crust for 10-12 minutes, or until golden brown and firm.
  5. While the crust is baking, prepare the yakitori sauce by mixing the diced chicken, soy sauce, mirin, sesame oil, and half of the green onions in a bowl. Let it marinate for 10 minutes.
  6. In a skillet over medium heat, stir-fry the marinated chicken for about 5-7 minutes until fully cooked.
  7. Remove the pizza crust from the oven and top it with the cooked chicken, sliced red bell pepper, and remaining green onions.
  8. Return the pizza to the oven and bake for an additional 5-7 minutes, until the vegetables are slightly tender.
  9. Remove from the oven, garnish with fresh cilantro if desired, and slice into wedges before serving.
