Ingredients

  • Zucchini - 2 medium, spiralized
  • Chicken breast - 200 grams, sliced thinly
  • Bell pepper - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Cabbage - 100 grams, shredded
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (or tamari for gluten-free) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add sliced chicken breast to the skillet and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Stir in minced garlic and ginger, cooking for an additional 1 minute until fragrant.
  4. Add the julienned bell pepper, carrot, and shredded cabbage. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
  5. Add the spiralized zucchini to the skillet, followed by the soy sauce and sesame oil. Toss everything together and cook for another 2-3 minutes until the zucchini is heated through.
