Ingredients

  • Riced cauliflower - 300 grams
  • Cooked chicken breast, diced - 150 grams
  • Eggs - 2 large
  • Green onions, chopped - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Carrots, diced - 50 grams
  • Red bell pepper, diced - 50 grams
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the minced garlic and ginger, sautéing until fragrant (about 1 minute).
  3. Add the diced carrots and red bell pepper, cooking until they begin to soften (about 3-4 minutes).
  4. Stir in the riced cauliflower and cooked chicken breast, cooking for an additional 5-7 minutes until heated through.
  5. Push the mixture to one side of the skillet and crack the eggs into the empty space, scrambling them until fully cooked.
  6. Mix the scrambled eggs into the cauliflower and chicken mixture.
  7. Add soy sauce and sesame oil, stirring well to combine.
  8. Season with salt and black pepper to taste.
  9. Finally, stir in the chopped green onions and cook for another minute before serving.
