- Ginger - 1 teaspoon, grated
- Bell pepper - 1 medium, sliced
- Green onions - 2, chopped
- Carrots - 1 medium, julienned
- Mushrooms (shiitake or button) - 100 grams, sliced

- Black pepper - to taste
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Spiralize the zucchini using a spiralizer or julienne peeler to create 'udon' noodles and set aside.
- Rinse the shirataki noodles under cold water, then boil for 2-3 minutes. Drain and set aside.
- In a large skillet or wok, heat sesame oil over medium-high heat. Add the minced garlic and grated ginger, sautéing until fragrant (about 1 minute).
- Add the sliced chicken breast and cook until browned and cooked through (about 5-7 minutes).
- Add the sliced bell pepper, carrots, and mushrooms to the skillet, stirring for another 3-4 minutes until the vegetables are tender.
- Stir in the zucchini noodles and shirataki noodles, mixing well with the chicken and vegetables.
- Pour in the soy sauce and season with salt and black pepper to taste. Cook for another 2-3 minutes, allowing the flavors to meld.
- Remove from heat and garnish with chopped green onions and sesame seeds before serving.
