Ingredients

  • Cauliflower - 400 grams, riced
  • Sesame oil - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Nori sheets - 2, cut into strips
  • Green onion - 2, finely chopped
  • Salt - 1/2 teaspoon
  • Ground black pepper - 1/4 teaspoon
  • Shredded cheese (mozzarella or cheddar) - 50 grams (optional for binding)
  • Cooking spray or additional sesame oil for grilling

Steps

  1. Begin by ricing the cauliflower using a food processor or box grater until it resembles rice.
  2. In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add the riced cauliflower and sauté for about 5-7 minutes until slightly tender and moisture is reduced.
  3. Stir in the soy sauce, chopped green onion, salt, pepper, and shredded cheese (if using). Mix well and cook for another 2-3 minutes until everything is combined and heated through.
  4. Remove the cauliflower mixture from the heat and allow it to cool slightly. Once cool enough to handle, form the mixture into triangular or oval shapes, similar to traditional onigiri.
  5. Wrap each formed onigiri with a strip of nori, pressing it gently to adhere. If desired, you can brush the outside of the onigiri with a little more sesame oil.
  6. In the same skillet, add a little cooking spray or sesame oil and heat over medium-high. Grill each onigiri for about 2-3 minutes on each side until golden brown and crispy.
