Ingredients
- Cauliflower - 400 grams, riced
- Sesame oil - 2 tablespoons
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Nori sheets - 2, cut into strips
- Green onion - 2, finely chopped
- Salt - 1/2 teaspoon
- Ground black pepper - 1/4 teaspoon
- Shredded cheese (mozzarella or cheddar) - 50 grams (optional for binding)
- Cooking spray or additional sesame oil for grilling
Steps
- Begin by ricing the cauliflower using a food processor or box grater until it resembles rice.
- In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add the riced cauliflower and sauté for about 5-7 minutes until slightly tender and moisture is reduced.
- Stir in the soy sauce, chopped green onion, salt, pepper, and shredded cheese (if using). Mix well and cook for another 2-3 minutes until everything is combined and heated through.
- Remove the cauliflower mixture from the heat and allow it to cool slightly. Once cool enough to handle, form the mixture into triangular or oval shapes, similar to traditional onigiri.
- Wrap each formed onigiri with a strip of nori, pressing it gently to adhere. If desired, you can brush the outside of the onigiri with a little more sesame oil.
- In the same skillet, add a little cooking spray or sesame oil and heat over medium-high. Grill each onigiri for about 2-3 minutes on each side until golden brown and crispy.
