- Kuzu starch - 30g
- Water - 200ml
- Erythritol - 20g
- Matcha powder (optional) - 1 tsp
- Unsweetened shredded coconut - 2 tbsp
- Soybean flour (kinako) - 2 tbsp
Steps
- In a small saucepan, combine the kuzu starch and erythritol. Gradually add water, stirring continuously until smooth.
- Place the saucepan over medium heat and keep stirring until the mixture thickens, about 5-7 minutes.
- Once thickened, remove from heat and pour the mixture into a small, lightly greased container or tray, spreading it evenly.
- Let it cool at room temperature for about 10 minutes, then refrigerate for another 10 minutes until firm.
- Once set, dust your work surface with soybean flour. Carefully remove the mochi from the container and cut it into bite-sized pieces.
- If desired, dust the mochi with matcha powder or shredded coconut for extra flavor and presentation.
