Ingredients
- Unagi (grilled eel) - 200 grams
- Cauliflower rice - 300 grams
- Soy sauce (low sodium) - 4 tablespoons
- Mirin (sugar-free) - 2 tablespoons
- Sake - 1 tablespoon
- Stevia or erythritol - 1 tablespoon
- Sesame oil - 1 tablespoon
- Green onions - 2 stalks, chopped
- Sesame seeds - 1 tablespoon
- Nori sheets - 1 for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a small saucepan, combine soy sauce, mirin, sake, and sweetener. Bring to a simmer over medium heat and cook until slightly thickened, about 5 minutes. Set aside.
- Place the grilled eel on a baking tray lined with parchment paper and brush with half of the teriyaki sauce. Bake for 10-12 minutes until heated through.
- While the eel is baking, heat sesame oil in a skillet over medium heat. Add the cauliflower rice and sauté for 5-7 minutes until softened.
- Once the eel is done, remove it from the oven and slice it into bite-sized pieces.
- To serve, place a generous portion of cauliflower rice in each bowl, top with the sliced eel, and drizzle with the remaining teriyaki sauce.
- Garnish with chopped green onions, sesame seeds, and strips of nori.
