- Zucchini - 2 medium, spiralized
- Chicken breast - 200 grams, sliced
- Soy sauce (low-sodium) - 60 ml
- Mirin (sugar-free) - 30 ml
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2 stalks, sliced
- Chili oil - 1 teaspoon (optional)
- Egg - 1, soft-boiled
- Sesame seeds - 1 tablespoon, toasted
Steps
- Spiralize the zucchinis using a spiralizer to create zucchini noodles and set aside.
- In a pan over medium heat, add sesame oil and sauté minced garlic and grated ginger until fragrant.
- Add the sliced chicken breast to the pan and cook until browned and fully cooked, about 5-7 minutes.
- In a separate bowl, mix together the low-sodium soy sauce and mirin, then pour it into the pan with the chicken. Let it simmer for 3-4 minutes.
- In a pot of boiling water, blanch the spiralized zucchini noodles for 1-2 minutes until just tender, then drain and rinse under cold water.
- To serve, place the zucchini noodles in bowls, pour the chicken and sauce mixture over the top, and garnish with sliced green onions, soft-boiled egg, and toasted sesame seeds. Drizzle with chili oil if desired.
