Ingredients

  • Zucchini - 2 medium, spiralized
  • Chicken breast - 200 grams, sliced
  • Soy sauce (low-sodium) - 60 ml
  • Mirin (sugar-free) - 30 ml
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, sliced
  • Chili oil - 1 teaspoon (optional)
  • Egg - 1, soft-boiled
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Spiralize the zucchinis using a spiralizer to create zucchini noodles and set aside.
  2. In a pan over medium heat, add sesame oil and sauté minced garlic and grated ginger until fragrant.
  3. Add the sliced chicken breast to the pan and cook until browned and fully cooked, about 5-7 minutes.
  4. In a separate bowl, mix together the low-sodium soy sauce and mirin, then pour it into the pan with the chicken. Let it simmer for 3-4 minutes.
  5. In a pot of boiling water, blanch the spiralized zucchini noodles for 1-2 minutes until just tender, then drain and rinse under cold water.
  6. To serve, place the zucchini noodles in bowls, pour the chicken and sauce mixture over the top, and garnish with sliced green onions, soft-boiled egg, and toasted sesame seeds. Drizzle with chili oil if desired.
