Ingredients

  • Pork loin fillet - 300 grams
  • Almond flour - 50 grams
  • Pork rinds (finely crushed) - 30 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cabbage (shredded) - 100 grams
  • Radishes (sliced) - 50 grams
  • Green onions (chopped) - 2 tablespoons
  • Keto-friendly tonkatsu sauce - 4 tablespoons
  • Olive oil - 2 tablespoons

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a shallow bowl, mix almond flour, crushed pork rinds, garlic powder, salt, and black pepper.
  3. In another bowl, beat the egg until well mixed.
  4. Slice the pork loin fillet into two equal pieces and pound them to about 1.5 cm thickness.
  5. Dip each pork piece in the beaten egg, then coat it with the almond flour mixture, pressing to ensure it sticks.
  6. Heat olive oil in an oven-safe skillet over medium heat. Once hot, add the pork patties and cook for about 3-4 minutes on each side until golden brown.
  7. Transfer the skillet to the preheated oven and bake for an additional 10 minutes or until the internal temperature reaches 70°C (160°F).
  8. While the pork is baking, prepare the slaw by mixing shredded cabbage, sliced radishes, and chopped green onions in a bowl.
  9. Once the pork is done, let it rest for a few minutes before assembling the burgers.
  10. Layer the slaw on a plate, place the pork patty on top, and drizzle with keto-friendly tonkatsu sauce. Serve immediately.
