- Pork loin fillet - 300 grams
- Almond flour - 50 grams
- Pork rinds (finely crushed) - 30 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cabbage (shredded) - 100 grams
- Radishes (sliced) - 50 grams
- Green onions (chopped) - 2 tablespoons
- Keto-friendly tonkatsu sauce - 4 tablespoons
- Olive oil - 2 tablespoons
Steps
- Preheat your oven to 200°C (400°F).
- In a shallow bowl, mix almond flour, crushed pork rinds, garlic powder, salt, and black pepper.
- In another bowl, beat the egg until well mixed.
- Slice the pork loin fillet into two equal pieces and pound them to about 1.5 cm thickness.
- Dip each pork piece in the beaten egg, then coat it with the almond flour mixture, pressing to ensure it sticks.
- Heat olive oil in an oven-safe skillet over medium heat. Once hot, add the pork patties and cook for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 10 minutes or until the internal temperature reaches 70°C (160°F).
- While the pork is baking, prepare the slaw by mixing shredded cabbage, sliced radishes, and chopped green onions in a bowl.
- Once the pork is done, let it rest for a few minutes before assembling the burgers.
- Layer the slaw on a plate, place the pork patty on top, and drizzle with keto-friendly tonkatsu sauce. Serve immediately.
