  • Grilled chicken breast (diced) - 100g
  • Bell pepper (sliced) - 50g
  • Green onions (sliced) - 2 tbsp
  • Soy sauce (or coconut aminos for a less sodium option) - 3 tbsp
  • Erythritol sweetener - 1 tbsp
  • Rice vinegar - 1 tbsp
  • Garlic (minced) - 1 clove
  • Ginger (grated) - 1 tsp
  • Sesame seeds - 1 tsp (for garnish)

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella cheese, cream cheese, egg, baking powder, and salt. Mix until a dough forms.
  3. Place the dough on a parchment-lined pizza stone or baking sheet. Press it out into a round pizza shape, about 0.5 cm thick.
  4. Bake the crust in the preheated oven for 12-15 minutes or until golden brown.
  5. While the crust is baking, prepare the teriyaki sauce by mixing soy sauce, erythritol, rice vinegar, minced garlic, and grated ginger in a small saucepan. Heat over medium heat until slightly thickened, about 5-7 minutes.
  6. Remove the pizza crust from the oven and spread a layer of the teriyaki sauce over it.
  7. Top the pizza with diced grilled chicken, sliced bell peppers, and sprinkle with green onions.
  8. Return the pizza to the oven and bake for an additional 5-7 minutes until the toppings are heated through.
  9. Garnish with sesame seeds before serving.
