- Almond flour - 100g

- Cream cheese - 50g
- Egg - 1 large
- Baking powder - 1 tsp

- Grilled chicken breast (diced) - 100g
- Bell pepper (sliced) - 50g
- Green onions (sliced) - 2 tbsp
- Soy sauce (or coconut aminos for a less sodium option) - 3 tbsp
- Erythritol sweetener - 1 tbsp
- Rice vinegar - 1 tbsp
- Garlic (minced) - 1 clove
- Ginger (grated) - 1 tsp
- Sesame seeds - 1 tsp (for garnish)
Steps
- Preheat the oven to 220°C (425°F).
- In a mixing bowl, combine almond flour, shredded mozzarella cheese, cream cheese, egg, baking powder, and salt. Mix until a dough forms.
- Place the dough on a parchment-lined pizza stone or baking sheet. Press it out into a round pizza shape, about 0.5 cm thick.
- Bake the crust in the preheated oven for 12-15 minutes or until golden brown.
- While the crust is baking, prepare the teriyaki sauce by mixing soy sauce, erythritol, rice vinegar, minced garlic, and grated ginger in a small saucepan. Heat over medium heat until slightly thickened, about 5-7 minutes.
- Remove the pizza crust from the oven and spread a layer of the teriyaki sauce over it.
- Top the pizza with diced grilled chicken, sliced bell peppers, and sprinkle with green onions.
- Return the pizza to the oven and bake for an additional 5-7 minutes until the toppings are heated through.
- Garnish with sesame seeds before serving.
