Ingredients

  • Almond flour - 100 grams
  • Psyllium husk - 10 grams

  • Shredded mozzarella cheese - 150 grams
  • Cooked octopus, diced - 100 grams
  • Green onions, chopped - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Mirin (or sugar-free substitute) - 1 teaspoon
  • Kewpie mayonnaise - 2 tablespoons
  • Tonkatsu sauce (sugar-free) - 1 tablespoon
  • Seaweed flakes (nori) - 1 tablespoon
  • Black sesame seeds - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
  3. In a separate bowl, whisk together the eggs and melted mozzarella cheese until smooth.
  4. Combine the dry ingredients with the wet mixture and stir until a dough forms.
  5. Spread the dough evenly on a parchment-lined baking sheet to form a pizza base, about 1 cm thick.
  6. Bake the pizza base in the preheated oven for 10-12 minutes until golden brown.
  7. While the base is baking, prepare the topping by mixing the diced octopus, chopped green onions, soy sauce, and mirin in a bowl.
  8. Once the pizza base is done, remove it from the oven and evenly distribute the octopus mixture over the top.
  9. Drizzle Kewpie mayonnaise and tonkatsu sauce over the toppings.
  10. Return the pizza to the oven and bake for an additional 5-7 minutes until heated through.
