Ingredients
- Nori sheets - 4 sheets
- Cauliflower rice - 200 grams (about 2 cups)
- Cream cheese - 100 grams
- Cucumber - 1 medium, julienned
- Avocado - 1 medium, sliced
- Imitation crab meat or cooked shrimp - 150 grams
- Sesame seeds - 2 tablespoons
- Soy sauce (or tamari) - for dipping
- Rice vinegar - 1 tablespoon
- Wasabi - optional, for serving
Steps
- Prepare the cauliflower rice by grating or processing cauliflower florets until they resemble rice grains.
- In a pan, lightly sauté the cauliflower rice with rice vinegar for about 5 minutes, then let it cool.
- Lay a sheet of nori on a bamboo sushi mat, shiny side down.
- Spread 50 grams of the cooled cauliflower rice evenly over the nori, leaving a 2 cm border at the top.
- In the center of the rice, layer cream cheese, cucumber, avocado, and imitation crab meat or shrimp.
- Sprinkle sesame seeds over the filling.
- Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll.
- Moisten the top border of the nori with a little water to seal the roll.
- Repeat the process with the remaining ingredients to make 3 more rolls.
- Slice each roll into 6 pieces and serve with soy sauce and wasabi if desired.
