Ingredients

  • Nori sheets - 4 sheets
  • Cauliflower rice - 200 grams (about 2 cups)
  • Cream cheese - 100 grams
  • Cucumber - 1 medium, julienned
  • Avocado - 1 medium, sliced
  • Imitation crab meat or cooked shrimp - 150 grams
  • Sesame seeds - 2 tablespoons
  • Soy sauce (or tamari) - for dipping
  • Rice vinegar - 1 tablespoon
  • Wasabi - optional, for serving

Steps

  1. Prepare the cauliflower rice by grating or processing cauliflower florets until they resemble rice grains.
  2. In a pan, lightly sauté the cauliflower rice with rice vinegar for about 5 minutes, then let it cool.
  3. Lay a sheet of nori on a bamboo sushi mat, shiny side down.
  4. Spread 50 grams of the cooled cauliflower rice evenly over the nori, leaving a 2 cm border at the top.
  5. In the center of the rice, layer cream cheese, cucumber, avocado, and imitation crab meat or shrimp.
  6. Sprinkle sesame seeds over the filling.
  7. Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll.
  8. Moisten the top border of the nori with a little water to seal the roll.
  9. Repeat the process with the remaining ingredients to make 3 more rolls.
  10. Slice each roll into 6 pieces and serve with soy sauce and wasabi if desired.
