  • Shirataki noodles - 200 grams

  • Cilantro - 1/4 cup, chopped
  • Sesame oil - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sweetener (erythritol or stevia) - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Rinse the shirataki noodles under cold water and pat dry.
  2. In a skillet, sauté the shirataki noodles over medium heat for 2-3 minutes to remove excess moisture.
  3. In a large bowl, combine the cucumber, carrot, red bell pepper, green onion, and cilantro.
  4. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, sweetener, and salt to create the dressing.
