Ingredients

  • Shirataki noodles - 200 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Radishes - 4, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Green onions - 2, chopped
  • Sesame seeds - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Fresh ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the shirataki noodles under cold water for 2-3 minutes, then drain and pat dry.
  2. In a medium pot, bring water to a boil and add the shirataki noodles. Cook for 2-3 minutes, then drain again and set aside.
  3. In a large bowl, combine the julienned cucumber, carrot, sliced radishes, red bell pepper, and chopped green onions.
  4. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, salt, and black pepper to create the dressing.
  5. Add the cooked shirataki noodles to the bowl of vegetables and pour the dressing over the top. Toss gently to combine.
  6. Sprinkle sesame seeds over the salad and serve immediately, or refrigerate for 30 minutes for enhanced flavors.
