- Shirataki noodles - 200 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Radishes - 4, thinly sliced
- Red bell pepper - 1, thinly sliced
- Green onions - 2, chopped
- Sesame seeds - 2 tablespoons
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Fresh ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the shirataki noodles under cold water for 2-3 minutes, then drain and pat dry.
- In a medium pot, bring water to a boil and add the shirataki noodles. Cook for 2-3 minutes, then drain again and set aside.
- In a large bowl, combine the julienned cucumber, carrot, sliced radishes, red bell pepper, and chopped green onions.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, salt, and black pepper to create the dressing.
- Add the cooked shirataki noodles to the bowl of vegetables and pour the dressing over the top. Toss gently to combine.
