Ingredients

  • Olive oil - 2 tbsp
  • Water - 100ml
  • Mozzarella cheese - 150g, shredded
  • Cherry tomatoes - 100g, halved
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 small, sliced
  • Cooked chicken breast - 100g, shredded
  • Soy sauce - 1 tbsp (optional)
  • Green onions - 2 tbsp, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
  3. In another bowl, whisk together the eggs, olive oil, and water until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. Transfer the dough to the prepared baking sheet and shape it into a round pizza crust, about 1 cm thick.
  6. Bake the crust in the preheated oven for 10-12 minutes, or until golden brown.
  7. Remove the crust from the oven and sprinkle the shredded mozzarella cheese evenly over the top.
  8. Add the halved cherry tomatoes, sliced bell pepper, zucchini, and shredded chicken evenly over the cheese.
  9. Drizzle soy sauce over the toppings if desired.
  10. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven, garnish with chopped green onions, slice, and serve hot.
