- Zucchini - 1 small, sliced
- Cooked chicken breast - 100g, shredded
- Soy sauce - 1 tbsp (optional)
- Green onions - 2 tbsp, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
- In another bowl, whisk together the eggs, olive oil, and water until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Transfer the dough to the prepared baking sheet and shape it into a round pizza crust, about 1 cm thick.
- Bake the crust in the preheated oven for 10-12 minutes, or until golden brown.
- Remove the crust from the oven and sprinkle the shredded mozzarella cheese evenly over the top.
- Add the halved cherry tomatoes, sliced bell pepper, zucchini, and shredded chicken evenly over the cheese.
- Drizzle soy sauce over the toppings if desired.
- Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped green onions, slice, and serve hot.
