Ingredients

  • Silken tofu - 200 grams
  • Cucumber - 1 medium, thinly sliced
  • Radish - 100 grams, julienned
  • Carrot - 50 grams, grated
  • White miso paste - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Stevia or erythritol - 1 teaspoon (optional)
  • Toasted sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Drain the silken tofu and pat it dry with a paper towel to remove excess moisture.
  2. In a mixing bowl, crumble the tofu with a fork until it reaches a smooth, creamy consistency.
  3. Add the white miso paste, sesame oil, rice vinegar, and optional sweetener to the bowl with the tofu. Mix well until everything is combined into a creamy dressing.
  4. In a separate bowl, combine the sliced cucumber, julienned radish, and grated carrot.
  5. Pour the tofu dressing over the vegetables and gently mix until all the veggies are well coated.
  6. Season with salt to taste and sprinkle toasted sesame seeds on top before serving.
