Ingredients

  • Dried wakame seaweed - 20 grams
  • Cucumber - 1 medium, thinly sliced
  • Radish - 1 medium, julienned
  • Sesame oil - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Soy sauce or tamari (for gluten-free) - 1 tablespoon
  • Toasted sesame seeds - 1 tablespoon
  • Green onion - 1, finely chopped
  • Salt - to taste
  • Black sesame seeds - 1 teaspoon (optional)

Steps

  1. Soak the dried wakame seaweed in warm water for about 10 minutes until it rehydrates and expands. Drain and squeeze out excess water.
  2. In a large mixing bowl, combine the rehydrated wakame, sliced cucumber, and julienned radish.
  3. In a separate small bowl, whisk together the sesame oil, rice vinegar, soy sauce, and salt to create the dressing.
  4. Pour the dressing over the seaweed and vegetables, tossing gently to combine.
  5. Sprinkle the toasted sesame seeds and chopped green onion on top, and toss again.
  6. If desired, sprinkle black sesame seeds for added color and crunch.
  7. Serve immediately or chill in the refrigerator for 10 minutes before serving.
