Ingredients

  • Cauliflower - 400 grams, riced
  • Egg - 1 large
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Cooked chicken breast - 100 grams, shredded
  • Green onions - 2 tablespoons, chopped
  • Nori sheets - 2 sheets, cut into strips
  • Sriracha sauce - for drizzling (optional)
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a large bowl, combine riced cauliflower, egg, mozzarella cheese, parmesan cheese, garlic powder, salt, black pepper, and soy sauce. Mix until well combined.
  3. Spread the cauliflower mixture evenly on a parchment-lined baking sheet, shaping it into a pizza crust about 1/2 inch thick.
  4. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
  5. Remove the crust from the oven and evenly distribute the shredded chicken and chopped green onions over the top.
  6. Add the nori strips evenly over the pizza, then return it to the oven for an additional 5-7 minutes until the toppings are warmed through.
