- Cauliflower - 400 grams, riced
- Egg - 1 large
- Mozzarella cheese - 100 grams, shredded
- Parmesan cheese - 30 grams, grated
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Cooked chicken breast - 100 grams, shredded
- Green onions - 2 tablespoons, chopped
- Nori sheets - 2 sheets, cut into strips
- Sriracha sauce - for drizzling (optional)
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Preheat the oven to 220°C (425°F).
- In a large bowl, combine riced cauliflower, egg, mozzarella cheese, parmesan cheese, garlic powder, salt, black pepper, and soy sauce. Mix until well combined.
- Spread the cauliflower mixture evenly on a parchment-lined baking sheet, shaping it into a pizza crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
- Remove the crust from the oven and evenly distribute the shredded chicken and chopped green onions over the top.
- Add the nori strips evenly over the pizza, then return it to the oven for an additional 5-7 minutes until the toppings are warmed through.
- Remove from the oven and drizzle with sriracha sauce if desired. Garnish with sesame seeds before slicing.
