- Zucchini - 2 medium, spiralized
- Cooked chicken breast - 200 grams, shredded
- Coconut milk - 200 ml
- Chicken broth - 250 ml
- Soy sauce (or tamari) - 2 tablespoons
- Miso paste - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Sesame oil - 1 tablespoon
- Eggs - 2, beaten
- Salt - to taste
- Black pepper - to taste
- Chili flakes - optional, to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine shredded chicken, coconut milk, chicken broth, soy sauce, miso paste, garlic, ginger, sesame oil, beaten eggs, salt, and pepper. Mix well until all ingredients are evenly combined.
- In a baking dish, spread the spiralized zucchini evenly across the bottom.
- Pour the chicken mixture over the zucchini, ensuring it is well distributed.
- Sprinkle chopped green onions on top and add chili flakes if using.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the top is slightly golden and set.
- Remove from the oven, let it cool for a few minutes, then serve warm.
