Ingredients

  • Cauliflower - 200 grams, riced
  • Chicken breast - 150 grams, diced
  • Eggs - 4 large
  • Green bell pepper - 50 grams, diced
  • Onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Soy sauce (or coconut aminos) - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions - 1 tablespoon, chopped (for garnish)

Steps

  1. Heat 1 tablespoon of olive oil in a pan over medium heat, then add the diced chicken breast and cook until golden brown, about 5-7 minutes.
  2. Add the onion, garlic, and green bell pepper to the pan and sauté for another 3-4 minutes until the vegetables are softened.
  3. Stir in the riced cauliflower and soy sauce (or coconut aminos), cooking for an additional 5 minutes until the cauliflower is tender. Season with salt and black pepper. Remove from heat and set aside.
  4. In a bowl, beat 2 eggs with a pinch of salt. In a separate non-stick skillet, heat 1 tablespoon of olive oil over medium-low heat. Pour in the beaten eggs and cook until the edges set, gently swirling the pan to let uncooked egg flow to the edges.
  5. Once the omelet is mostly cooked but still slightly runny on top, spoon half of the cauliflower and chicken mixture onto one half of the omelet. Fold the other half over the filling and slide onto a plate. Repeat with the remaining ingredients to make the second omelet.
  6. Garnish with chopped green onions and serve hot.
