Ingredients

  • Shirataki noodles - 200 grams
  • Chicken breast - 150 grams, thinly sliced
  • Bell pepper - 1 medium, julienned
  • Zucchini - 1 medium, julienned
  • Broccoli florets - 100 grams
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2, sliced
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Drain and rinse the shirataki noodles under cold water for 1-2 minutes, then set aside.
  2. In a large skillet or wok, heat the sesame oil over medium-high heat.
  3. Add the minced garlic and ginger to the skillet, sautéing for about 30 seconds until fragrant.
  4. Add the sliced chicken breast to the skillet and cook for 5-7 minutes until browned and cooked through.
  5. Add the julienned bell pepper, zucchini, and broccoli florets to the skillet and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  6. Stir in the shirataki noodles and soy sauce, mixing everything thoroughly for another 2-3 minutes until heated through.
  7. Remove from heat and garnish with sliced green onions and sesame seeds before serving.
