Ingredients

  • Shirataki noodles - 200 grams
  • Chicken breast - 150 grams, sliced
  • Miso paste - 1 tablespoon
  • Chicken broth - 500 ml (preferably low sodium)
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Spinach - 50 grams
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the Shirataki noodles under cold water and drain well.
  2. In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
  3. Add the sliced chicken breast to the pot and cook until browned and cooked through, about 5-7 minutes.
  4. Pour in the chicken broth and bring to a simmer.
  5. Stir in the miso paste and soy sauce, mixing well until the miso is dissolved.
  6. Add the Shirataki noodles and spinach to the pot, and simmer for an additional 3-4 minutes to heat the noodles and wilt the spinach.
  7. Season the soup with salt and black pepper to taste.
  8. Ladle the soup into bowls and garnish with chopped green onions before serving.
