- Shirataki noodles - 200 grams
- Chicken breast - 150 grams, sliced
- Miso paste - 1 tablespoon
- Chicken broth - 500 ml (preferably low sodium)
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Spinach - 50 grams
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the Shirataki noodles under cold water and drain well.
- In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
- Add the sliced chicken breast to the pot and cook until browned and cooked through, about 5-7 minutes.
- Pour in the chicken broth and bring to a simmer.
- Stir in the miso paste and soy sauce, mixing well until the miso is dissolved.
- Add the Shirataki noodles and spinach to the pot, and simmer for an additional 3-4 minutes to heat the noodles and wilt the spinach.
- Season the soup with salt and black pepper to taste.
- Ladle the soup into bowls and garnish with chopped green onions before serving.
