Ingredients

  • Chicken thigh - 300 grams
  • Green onion - 2 stalks
  • Soy sauce (low-sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 1 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Lettuce leaves (for wrapping) - 4 large
  • Avocado - 1 medium
  • Mayonnaise (sugar-free) - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste
  • Sesame seeds - 1 teaspoon

Steps

  1. Cut the chicken thighs into bite-sized pieces and place them in a bowl.
  2. Add soy sauce, sesame oil, minced garlic, grated ginger, salt, and pepper to the chicken, and mix well. Let it marinate for at least 15 minutes.
  3. While the chicken is marinating, chop the green onions into 5 cm lengths.
  4. After marinating, thread the chicken pieces and green onion onto skewers, alternating between the two.
  5. Preheat a grill or grill pan over medium-high heat. Grill the skewers for about 5-7 minutes on each side or until the chicken is cooked through and has nice grill marks.
  6. While grilling, slice the avocado and prepare the lettuce leaves by washing and drying them.
  7. Once the chicken skewers are cooked, remove them from the grill and let them rest for a couple of minutes.
  8. To assemble, take a lettuce leaf, spread a tablespoon of sugar-free mayonnaise, and place the grilled chicken and green onion skewers inside. Top with sliced avocado and sprinkle with sesame seeds.
