Ingredients

  • Japanese eggplant - 200 grams
  • Cucumber - 100 grams
  • Radish - 50 grams
  • Green onion - 2 stalks
  • Sesame oil - 2 tablespoons
  • Soy sauce (low sodium) - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a grill or grill pan over medium heat.
  2. Slice the Japanese eggplant in half lengthwise and brush with 1 tablespoon of sesame oil, then season with salt and black pepper.
  3. Place the eggplant cut-side down on the grill, cooking for about 5-7 minutes until charred and tender. Flip and grill for an additional 3-4 minutes.
  4. While the eggplant is grilling, thinly slice the cucumber, radish, and green onion.
  5. In a bowl, whisk together the remaining 1 tablespoon of sesame oil, soy sauce, rice vinegar, and sesame seeds to create the dressing.
  6. Once the eggplant is cooked, remove it from the grill and let it cool slightly before slicing it into bite-sized pieces.
  7. In a large bowl, combine the sliced cucumber, radish, green onion, and grilled eggplant. Drizzle the dressing over the salad and toss gently to combine.
  8. Serve immediately, garnished with extra sesame seeds if desired.
