Ingredients
- Japanese eggplant - 200 grams
- Cucumber - 100 grams
- Radish - 50 grams
- Green onion - 2 stalks
- Sesame oil - 2 tablespoons
- Soy sauce (low sodium) - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat a grill or grill pan over medium heat.
- Slice the Japanese eggplant in half lengthwise and brush with 1 tablespoon of sesame oil, then season with salt and black pepper.
- Place the eggplant cut-side down on the grill, cooking for about 5-7 minutes until charred and tender. Flip and grill for an additional 3-4 minutes.
- While the eggplant is grilling, thinly slice the cucumber, radish, and green onion.
- In a bowl, whisk together the remaining 1 tablespoon of sesame oil, soy sauce, rice vinegar, and sesame seeds to create the dressing.

- In a large bowl, combine the sliced cucumber, radish, green onion, and grilled eggplant. Drizzle the dressing over the salad and toss gently to combine.
