- Green onions (sliced) - 2 tablespoons
- Sesame seeds - 1 tablespoon
- Red pepper flakes - 1/2 teaspoon
- Water - 100 ml
Steps
- Preheat the oven to 200°C (400°F).
- Slice the Japanese eggplants in half lengthwise and score the flesh in a crisscross pattern.
- In a bowl, mix together the soy sauce, sugar-free mirin, sesame oil, minced garlic, grated ginger, and water.
- Place the eggplant halves in a baking dish and pour the marinade over them, ensuring they are well coated.
