Ingredients

  • Japanese eggplant - 2 medium

  • Mirin (sugar-free) - 30 ml
  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 1 clove
  • Ginger (grated) - 1 teaspoon
  • Green onions (sliced) - 2 tablespoons
  • Sesame seeds - 1 tablespoon
  • Red pepper flakes - 1/2 teaspoon
  • Water - 100 ml

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the Japanese eggplants in half lengthwise and score the flesh in a crisscross pattern.
  3. In a bowl, mix together the soy sauce, sugar-free mirin, sesame oil, minced garlic, grated ginger, and water.
  4. Place the eggplant halves in a baking dish and pour the marinade over them, ensuring they are well coated.
  5. Sprinkle red pepper flakes on top for a bit of heat.
