Ingredients

  • Japanese eggplant - 2 medium
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Miso paste - 2 tablespoons
  • Erythritol (or preferred sweetener) - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Konjac noodles - 200 grams
  • Sesame seeds - 1 tablespoon
  • Green onions - 2 tablespoons (chopped)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the Japanese eggplants in half lengthwise and score the flesh in a crisscross pattern.
  3. Brush the cut sides of the eggplants with olive oil and sprinkle with salt.
  4. Place the eggplants cut side down on a baking sheet and roast in the oven for 20 minutes.
  5. While the eggplants are roasting, prepare the miso glaze by mixing miso paste, erythritol, rice vinegar, and soy sauce in a small bowl until smooth.
  6. After 20 minutes, remove the eggplants from the oven, flip them over, and spread the miso glaze evenly over the cut sides.
  7. Return the eggplants to the oven and roast for an additional 10 minutes until the glaze is caramelized.
  8. Meanwhile, rinse the konjac noodles under cold water and heat them in a pot of boiling water for 2-3 minutes until heated through.
  9. Drain the konjac noodles and divide them between two serving bowls.
  10. Top the noodles with the roasted eggplants, sprinkle with sesame seeds and chopped green onions, and serve immediately.
