Ingredients
- Japanese eggplant - 2 medium
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Miso paste - 2 tablespoons
- Erythritol (or preferred sweetener) - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Konjac noodles - 200 grams
- Sesame seeds - 1 tablespoon
- Green onions - 2 tablespoons (chopped)
Steps
- Preheat your oven to 200°C (400°F).
- Slice the Japanese eggplants in half lengthwise and score the flesh in a crisscross pattern.
- Brush the cut sides of the eggplants with olive oil and sprinkle with salt.
- Place the eggplants cut side down on a baking sheet and roast in the oven for 20 minutes.
- While the eggplants are roasting, prepare the miso glaze by mixing miso paste, erythritol, rice vinegar, and soy sauce in a small bowl until smooth.
- After 20 minutes, remove the eggplants from the oven, flip them over, and spread the miso glaze evenly over the cut sides.
- Return the eggplants to the oven and roast for an additional 10 minutes until the glaze is caramelized.
- Meanwhile, rinse the konjac noodles under cold water and heat them in a pot of boiling water for 2-3 minutes until heated through.
- Drain the konjac noodles and divide them between two serving bowls.
- Top the noodles with the roasted eggplants, sprinkle with sesame seeds and chopped green onions, and serve immediately.
