Ingredients

  • Water - 300 ml
  • Agar-agar powder - 2 g
  • Erythritol or Monk fruit sweetener - 30 g
  • Matcha powder - 1 tsp
  • Salt - a pinch

Steps

  1. In a small saucepan, combine 300 ml of water and 2 g of agar-agar powder. Stir well to dissolve the agar-agar.
  2. Bring the mixture to a boil over medium heat, stirring constantly. Once boiling, reduce heat and simmer for an additional 5 minutes.
  3. Add 30 g of erythritol (or monk fruit sweetener) and a pinch of salt to the agar-agar mixture. Stir until fully dissolved.
  4. Remove the saucepan from heat and divide the mixture into two equal portions.
  5. In one portion, whisk in 1 tsp of matcha powder until fully incorporated.
  6. Pour the matcha mixture into a mold or serving dish and refrigerate for 10 minutes until slightly set.
  7. Once the matcha layer has set, carefully pour the remaining clear agar mixture over it.
  8. Refrigerate for an additional 10-15 minutes until fully set.
  9. Once set, slice into desired shapes and serve chilled.
