Ingredients

  • Dashi broth - 500 ml
  • Miso paste (white or yellow) - 2 tablespoons
  • Firm tofu - 100 grams, cubed
  • Green onions - 2 stalks, chopped
  • Seaweed (wakame) - 5 grams, dried
  • Shiitake mushrooms - 50 grams, sliced
  • Soy sauce (low sodium) - 1 teaspoon
  • Sesame oil - 1 teaspoon

Steps

  1. In a medium saucepan, bring the dashi broth to a gentle simmer over medium heat.
  2. Add the dried wakame seaweed to the broth and let it rehydrate for about 2 minutes.
  3. Stir in the sliced shiitake mushrooms and cook for another 2-3 minutes until tender.
  4. In a small bowl, mix the miso paste with a ladle of hot broth to dissolve it, then return the mixture to the pot.
  5. Add the cubed tofu and soy sauce, and let it heat through for about 2 minutes without boiling.
  6. Remove from heat and stir in the sesame oil and chopped green onions just before serving.
