Ingredients

  • Shirataki noodles - 200 grams
  • Miso paste - 2 tablespoons
  • Chicken broth - 500 ml
  • Coconut aminos - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, sliced
  • Soft-boiled eggs - 2
  • Spinach - 100 grams
  • Tofu - 100 grams, cubed
  • Nori sheets - 1, cut into strips

Steps

  1. Rinse the shirataki noodles under cold water and set aside.
  2. In a pot, heat sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
  3. Add the chicken broth and bring to a simmer.
  4. Stir in the miso paste and coconut aminos until well combined and dissolved.
  5. Add the cubed tofu and spinach to the broth, cooking until the spinach wilts.
  6. Add the shirataki noodles to the pot and heat through for 2-3 minutes.
  7. Serve the ramen in bowls, topping each with a soft-boiled egg, sliced green onions, and nori strips.
