Ingredients

  • Cauliflower - 300 grams, chopped into florets
  • Shirataki noodles - 100 grams, drained and rinsed
  • Unsweetened almond milk - 100 ml
  • Miso paste (white or yellow) - 2 tablespoons
  • Cream cheese - 50 grams, softened
  • Shredded mozzarella cheese - 100 grams
  • Grated Parmesan cheese - 30 grams
  • Garlic powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Chopped green onions - 2 tablespoons (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pot of boiling water, cook the cauliflower florets for about 5-7 minutes until tender. Drain and set aside.
  3. In a mixing bowl, combine the almond milk, miso paste, cream cheese, garlic powder, black pepper, and salt. Whisk until smooth.
  4. Add the cooked cauliflower and drained shirataki noodles to the mixing bowl, gently folding them into the sauce until well coated.
  5. Transfer the mixture into a baking dish and spread it evenly. Top with shredded mozzarella and grated Parmesan cheese.
  6. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
