- Cauliflower - 300 grams, chopped into florets
- Shirataki noodles - 100 grams, drained and rinsed
- Unsweetened almond milk - 100 ml
- Miso paste (white or yellow) - 2 tablespoons
- Cream cheese - 50 grams, softened
- Shredded mozzarella cheese - 100 grams
- Grated Parmesan cheese - 30 grams
- Garlic powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Chopped green onions - 2 tablespoons (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- In a pot of boiling water, cook the cauliflower florets for about 5-7 minutes until tender. Drain and set aside.
- In a mixing bowl, combine the almond milk, miso paste, cream cheese, garlic powder, black pepper, and salt. Whisk until smooth.
- Add the cooked cauliflower and drained shirataki noodles to the mixing bowl, gently folding them into the sauce until well coated.
- Transfer the mixture into a baking dish and spread it evenly. Top with shredded mozzarella and grated Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
