- Rice vinegar - 1 tablespoon
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Fresh cilantro - 10 grams, chopped

Steps
- Bring a pot of water to a boil and add the sliced lotus root. Blanch for 3-4 minutes until slightly tender but still crunchy. Drain and rinse under cold water to stop the cooking process.
