Ingredients

  • Lotus root - 200 grams, peeled and thinly sliced
  • Cucumber - 100 grams, julienned
  • Radish - 50 grams, thinly sliced
  • Carrot - 50 grams, julienned
  • Green onion - 2 stalks, chopped
  • Sesame oil - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Fresh cilantro - 10 grams, chopped
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Bring a pot of water to a boil and add the sliced lotus root. Blanch for 3-4 minutes until slightly tender but still crunchy. Drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the blanched lotus root, cucumber, radish, carrot, and green onion.
