Ingredients

  • Chicken breast - 300 grams
  • Almond flour - 50 grams
  • Parmesan cheese, grated - 30 grams
  • Pork rinds, crushed - 30 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 (wooden or metal)

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Cut the chicken breast into bite-sized pieces and soak the wooden skewers in water for 15 minutes if using wooden skewers.
  3. In a bowl, mix the almond flour, grated parmesan cheese, crushed pork rinds, garlic powder, onion powder, salt, and black pepper until well combined.
  4. In a separate bowl, beat the egg until frothy.
  5. Thread the chicken pieces onto the skewers, ensuring they are evenly spaced.
  6. Dip each skewer into the beaten egg, allowing excess to drip off, then roll in the almond flour mixture, ensuring an even coating.
  7. Place the skewers on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown.
  8. Serve hot with a side of sugar-free dipping sauce or a fresh salad.
