Ingredients
- Chicken breast - 300 grams
- Almond flour - 100 grams
- Egg - 1 large
- Cauliflower rice - 300 grams
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon (or sugar-free alternative)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Slice the chicken breast into thin cutlets and season with salt and black pepper.
- In a shallow bowl, beat the egg and set aside.
- In another shallow bowl, place the almond flour.
- Dip each chicken cutlet into the egg, then coat with almond flour, pressing gently to adhere.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Fry the chicken cutlets for 3-4 minutes on each side until golden brown.
- Transfer the chicken cutlets to a baking sheet and bake for 10 minutes until cooked through.
- While the chicken is baking, prepare the cauliflower rice according to package instructions or steam it until tender.
- In a small bowl, mix the soy sauce and mirin together.
- Once the chicken is done baking, slice it into strips.
- Serve the cauliflower rice in bowls, top with chicken strips, drizzle with the soy sauce mixture, and garnish with chopped green onions and sesame seeds.
