Ingredients

  • Chicken breast - 300 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Cauliflower rice - 300 grams
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon (or sugar-free alternative)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the chicken breast into thin cutlets and season with salt and black pepper.
  3. In a shallow bowl, beat the egg and set aside.
  4. In another shallow bowl, place the almond flour.
  5. Dip each chicken cutlet into the egg, then coat with almond flour, pressing gently to adhere.
  6. Heat 1 tablespoon of olive oil in a skillet over medium heat. Fry the chicken cutlets for 3-4 minutes on each side until golden brown.
  7. Transfer the chicken cutlets to a baking sheet and bake for 10 minutes until cooked through.
  8. While the chicken is baking, prepare the cauliflower rice according to package instructions or steam it until tender.
  9. In a small bowl, mix the soy sauce and mirin together.
  10. Once the chicken is done baking, slice it into strips.
  11. Serve the cauliflower rice in bowls, top with chicken strips, drizzle with the soy sauce mixture, and garnish with chopped green onions and sesame seeds.
