Ingredients
- Kabocha squash - 200 grams
- Almond flour - 50 grams
- Egg - 1 large
- Green onion - 2 tablespoons, finely chopped
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - 2 tablespoons, for frying
- Romaine lettuce leaves - 4, for serving
- Sliced cucumber - 50 grams, for topping
- Miso paste - 1 tablespoon, for sauce
- Mayonnaise - 2 tablespoons, for sauce
Steps
- Cut the kabocha squash in half, remove seeds, and steam or microwave until tender, about 10-15 minutes. Let it cool slightly, then scoop out the flesh into a bowl.
- Mash the kabocha squash until smooth, then add the almond flour, egg, green onion, garlic powder, salt, and black pepper. Mix until well combined.
- Form the mixture into two patties, approximately 1.5 cm thick.
- Heat the coconut oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and firm.
- While the patties are cooking, mix the miso paste and mayonnaise together in a small bowl to create the sauce.
- To assemble, place each kabocha patty on a romaine lettuce leaf, top with sliced cucumber, and drizzle with miso mayo. Serve immediately.
