Ingredients

  • Kabocha squash - 200 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Green onion - 2 tablespoons, finely chopped
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - 2 tablespoons, for frying
  • Romaine lettuce leaves - 4, for serving
  • Sliced cucumber - 50 grams, for topping
  • Miso paste - 1 tablespoon, for sauce
  • Mayonnaise - 2 tablespoons, for sauce

Steps

  1. Cut the kabocha squash in half, remove seeds, and steam or microwave until tender, about 10-15 minutes. Let it cool slightly, then scoop out the flesh into a bowl.
  2. Mash the kabocha squash until smooth, then add the almond flour, egg, green onion, garlic powder, salt, and black pepper. Mix until well combined.
  3. Form the mixture into two patties, approximately 1.5 cm thick.
  4. Heat the coconut oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and firm.
  5. While the patties are cooking, mix the miso paste and mayonnaise together in a small bowl to create the sauce.
  6. To assemble, place each kabocha patty on a romaine lettuce leaf, top with sliced cucumber, and drizzle with miso mayo. Serve immediately.
