Ingredients

  • Hijiki seaweed - 20 grams (dry)
  • Cucumber - 100 grams (sliced thinly)
  • Daikon radish - 100 grams (julienned)
  • Carrot - 50 grams (julienned)
  • Red bell pepper - 50 grams (sliced thinly)
  • Green onion - 2 stalks (chopped)
  • Sesame oil - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 1 tablespoon (or tamari for gluten-free)
  • Sesame seeds - 1 tablespoon (toasted)
  • Salt - to taste

Steps

  1. Rinse the hijiki seaweed under cold water and soak it in warm water for about 10 minutes until it expands.
  2. While the hijiki is soaking, prepare the vegetables: slice the cucumber, julienne the daikon radish and carrot, and slice the red bell pepper.
  3. Drain the hijiki and squeeze out any excess water before combining it with the prepared vegetables in a large mixing bowl.
  4. In a separate small bowl, whisk together the sesame oil, rice vinegar, soy sauce, and a pinch of salt to create the dressing.
  5. Pour the dressing over the vegetable and hijiki mixture, tossing gently to ensure everything is well coated.
  6. Sprinkle the toasted sesame seeds and chopped green onion on top before serving.
