Ingredients

  • Ground beef - 250 grams
  • Miso paste - 2 tablespoons
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 2 stalks, chopped
  • Shiitake mushrooms - 100 grams, sliced
  • Zucchini - 1 medium, spiralized
  • Beef broth - 500 milliliters
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Egg - 1, beaten
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine ground beef, miso paste, minced garlic, grated ginger, chopped green onion, beaten egg, salt, and black pepper. Mix until well combined and form into 2 equal patties.
  2. Heat sesame oil in a skillet over medium heat. Cook the beef patties for about 4-5 minutes on each side, or until fully cooked to your desired doneness. Remove from skillet and set aside.
  3. In the same skillet, add sliced shiitake mushrooms and cook for 2-3 minutes until they are tender. Pour in the beef broth and coconut aminos, bringing the mixture to a gentle simmer.
  4. Add spiralized zucchini to the broth and cook for an additional 2-3 minutes until the zucchini is just tender.
  5. To serve, place a beef patty in a bowl and ladle the broth and zucchini over the top. Garnish with additional chopped green onion if desired.
