Ingredients
- Ground beef - 250 grams
- Miso paste - 2 tablespoons
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Green onion - 2 stalks, chopped
- Shiitake mushrooms - 100 grams, sliced
- Zucchini - 1 medium, spiralized
- Beef broth - 500 milliliters
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 tablespoon
- Egg - 1, beaten
- Salt - to taste
- Black pepper - to taste
Steps
- In a mixing bowl, combine ground beef, miso paste, minced garlic, grated ginger, chopped green onion, beaten egg, salt, and black pepper. Mix until well combined and form into 2 equal patties.
- Heat sesame oil in a skillet over medium heat. Cook the beef patties for about 4-5 minutes on each side, or until fully cooked to your desired doneness. Remove from skillet and set aside.
- In the same skillet, add sliced shiitake mushrooms and cook for 2-3 minutes until they are tender. Pour in the beef broth and coconut aminos, bringing the mixture to a gentle simmer.
- Add spiralized zucchini to the broth and cook for an additional 2-3 minutes until the zucchini is just tender.
- To serve, place a beef patty in a bowl and ladle the broth and zucchini over the top. Garnish with additional chopped green onion if desired.
