Ingredients

  • Cauliflower rice - 300 grams
  • Bitter melon - 100 grams, sliced
  • Firm tofu - 150 grams, cubed
  • Pork belly - 100 grams, thinly sliced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat a large skillet over medium heat and add the sesame oil.
  2. Add the sliced pork belly to the skillet and cook until browned and crispy, about 5-7 minutes.
  3. Remove the pork from the skillet and set it aside, leaving some fat in the pan.
  4. Add the minced garlic and ginger to the skillet and sauté for 1 minute until fragrant.
  5. Add the sliced bitter melon to the skillet and cook for about 3-4 minutes until slightly tender.
  6. Stir in the cubed tofu and cook for another 5 minutes, gently stirring to brown the tofu.
  7. Add the cauliflower rice to the skillet, followed by the cooked pork, soy sauce, salt, and black pepper. Stir well to combine.
  8. Cook for another 5-7 minutes until the cauliflower rice is heated through and slightly tender.
  9. Garnish with chopped green onions before serving.
