Ingredients
- Cauliflower rice - 300 grams
- Bitter melon - 100 grams, sliced
- Firm tofu - 150 grams, cubed
- Pork belly - 100 grams, thinly sliced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Green onions - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Heat a large skillet over medium heat and add the sesame oil.
- Add the sliced pork belly to the skillet and cook until browned and crispy, about 5-7 minutes.
- Remove the pork from the skillet and set it aside, leaving some fat in the pan.
- Add the minced garlic and ginger to the skillet and sauté for 1 minute until fragrant.
- Add the sliced bitter melon to the skillet and cook for about 3-4 minutes until slightly tender.
- Stir in the cubed tofu and cook for another 5 minutes, gently stirring to brown the tofu.
- Add the cauliflower rice to the skillet, followed by the cooked pork, soy sauce, salt, and black pepper. Stir well to combine.
- Cook for another 5-7 minutes until the cauliflower rice is heated through and slightly tender.
- Garnish with chopped green onions before serving.
