Ingredients

  • Fresh spinach - 200 grams
  • White sesame seeds - 2 tablespoons
  • Black sesame seeds - 1 tablespoon
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Stevia or erythritol (optional) - 1 teaspoon
  • Garlic (minced) - 1 clove
  • Ginger (grated) - 1 teaspoon
  • Water - 1 liter

Steps

  1. Bring a liter of water to a boil in a pot.
  2. Add the fresh spinach to the boiling water and blanch for about 1-2 minutes until wilted.
  3. Drain the spinach and immediately transfer it to a bowl of ice water to stop the cooking process. Let it cool for a few minutes, then drain again and squeeze out excess water.
  4. In a dry skillet, toast the white and black sesame seeds over medium heat for about 2-3 minutes until fragrant, stirring occasionally.
  5. In a small bowl, combine the toasted sesame seeds, soy sauce, sesame oil, minced garlic, grated ginger, and stevia or erythritol (if using). Mix well to create the dressing.
  6. Chop the blanched spinach into bite-sized pieces and place it in a serving bowl.
  7. Pour the sesame dressing over the spinach and toss well to coat evenly.
  8. Serve immediately or chill in the refrigerator for a refreshing cold salad.
