Ingredients
- Fresh spinach - 200 grams
- White sesame seeds - 2 tablespoons
- Black sesame seeds - 1 tablespoon
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Stevia or erythritol (optional) - 1 teaspoon
- Garlic (minced) - 1 clove
- Ginger (grated) - 1 teaspoon
- Water - 1 liter
Steps
- Bring a liter of water to a boil in a pot.
- Add the fresh spinach to the boiling water and blanch for about 1-2 minutes until wilted.
- Drain the spinach and immediately transfer it to a bowl of ice water to stop the cooking process. Let it cool for a few minutes, then drain again and squeeze out excess water.
- In a dry skillet, toast the white and black sesame seeds over medium heat for about 2-3 minutes until fragrant, stirring occasionally.
- In a small bowl, combine the toasted sesame seeds, soy sauce, sesame oil, minced garlic, grated ginger, and stevia or erythritol (if using). Mix well to create the dressing.
- Chop the blanched spinach into bite-sized pieces and place it in a serving bowl.
- Pour the sesame dressing over the spinach and toss well to coat evenly.
- Serve immediately or chill in the refrigerator for a refreshing cold salad.
