Steps
- Begin by removing the leaves and stem from the cauliflower and cutting it into florets.
- Pulse the cauliflower florets in a food processor until it resembles rice grains (about 5 seconds).
- Heat the sesame oil in a large skillet over medium heat, then add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
- Add the sliced shiitake mushrooms and cook for 3-4 minutes until they soften.
- Stir in the cauliflower rice and soy sauce. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
- Push the cauliflower mixture to one side of the skillet and pour the beaten egg into the empty side, scrambling it until fully cooked.
- Mix the scrambled egg into the cauliflower rice and add the chopped green onions, stirring to combine.
- Season with salt and black pepper to taste, then remove from heat and serve hot, garnished with sesame seeds.
