Ingredients

  • Cauliflower - 300 grams

  • Sesame oil - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Shiitake mushrooms - 100 grams, sliced
  • Egg - 1 large, beaten
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Begin by removing the leaves and stem from the cauliflower and cutting it into florets.
  2. Pulse the cauliflower florets in a food processor until it resembles rice grains (about 5 seconds).
  3. Heat the sesame oil in a large skillet over medium heat, then add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
  4. Add the sliced shiitake mushrooms and cook for 3-4 minutes until they soften.
  5. Stir in the cauliflower rice and soy sauce. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
  6. Push the cauliflower mixture to one side of the skillet and pour the beaten egg into the empty side, scrambling it until fully cooked.
  7. Mix the scrambled egg into the cauliflower rice and add the chopped green onions, stirring to combine.
  8. Season with salt and black pepper to taste, then remove from heat and serve hot, garnished with sesame seeds.
